Carb Loading for the Be Kind to Your Mind Run on Saturday

We had an Italian feast at Clubhouse. Today we prepared eggplant parmesan and cheese lasagna. And for dessert, we had strawberry rhubarb pie. We have to load up on the calories in order to run our 10k on Saturday, or at least thats the excuse we are using. It was the first time any of us had made eggplant. Some were challenged and didn't think we could do it. However, the power of teamwork carried us through and it was amazing.
